Move Over, Tequila—Sotol Is The Mexican Spirit That Deserves Your Attention

Pedro Ramirez, head bartender at New York City Mexican restaurant La Esquina, shares that while tequila is typically made in masonry ovens, sotol is made underground in conical stone ovens—and the sotol plant is typically older and much more concentrated than the agave plant. All these differences contribute to a finished spirit with its own distinct flavor profile and nuance.

It may feel like La Esquina opened not too long ago, but this Mexican restaurant turns 21-years-old this year. Famous for its unconventional entrance that leads you through the kitchen and into the sexy, candlewax-dripped main dining room, the favorite SoHo spot still wows guests in other ways.

Late-night Mexican

Ok, so Scott and Kip never actually made it to the Mexican restaurant where they were planning to dine their first night together, choosing instead to go to Scott's apartment and, uh, not eat, but if it's post-party tacos and tortas you're after, Amor Loca in Hell's Kitchen is open until 2am, as is Rancho Tequileria and La Esquina.

WORDS BY FAMILY STYLE - ENTER THROUGH THE KITCHEN

Beneath a nondescript taqueria, La Esquina hosted Family Style and Takeaway's annual holiday team dinner, where spicy margs were as free flowing as the iconic cantina's infamous tostadas.
There are few gems as rare as La Esquina. Twenty years after opening its doors, the O.G. speakeasy—one of the worst kept secrets by those in the know—remains one of the most elite eateries in all of New York. Generations of creatives have poured through its hallowed, tequila-lined halls over the past two decades, making the descent from SoHo streets to underground brasserie for a night of tacos and debauchery. Rounding out its milestone anniversary, the iconic restaurant, which has now spanned four other locations across the city, hosted Family Style and Takeaway's family-only holiday dinner.
